Texas Lemonade: Three Ways

1) Skinny & Bubbly

Looking for a great way to beat that Texas summer heat, but one that won’t break the calorie budget? This classic skinny lemonade is as refreshingly sweet as it is surprising.

Ingredients

  • 3/4 cups agave nectar (or to taste)
  • 1 cup of water
  • 6 cups Topo Chico
  • 1 1/2 cups freshly squeezed lemon juice
  • 1 tablespoon finely grated ginger (optional)
  • 6 large mint leaves (optional)
  • Ice (as needed)
  • 1 lemon sliced for garnish

Directions

Step 1: Juice the lemons

A great trick is to roll the lemons on a cutting board with a little pressure prior to cutting them in half. More juice will come out and it will be easier to squeeze.

Step 2: Combine agave nectar and water

In a small sauce pan, combine 1 cup of water and agave nectar, and bring to a low boil. Turn off heat and let cool.

Step 3: Add water and ice

Pour all ingredients, including 6 cups of cold Topo Chico, into a pitcher. Add ice, strip, and pour.

2) Back Porch Perfection

The classic. The one that started it all. It makes you think of Red Ryder, tall grass, drinking out of the garden hose, and coming home ”before dinner.“ This luxurious liquid is fit for sipping on the porch or selling at the yard sale. Either way, you’ll be drinking in your childhood all over again.

Ingredients

  • 1 1/4 cups white sugar
  • 1 cup water
  • 6 cups, ice-cold water
  • 1 1/4 cups freshly squeezed lemon juice
  • Ice (as needed)
  • 1 lemon sliced for garnish

Directions

Step 1: Juice the lemons

Roll, cut, squeeze. Repeat. It never hurts to have too much.

Step 2: Make simple syrup

In a small sauce pan, bring your sugar and water to a boil. Once the sugar has dissolved, turn off the heat and let it cool.

Step 3: Combine. Drink.

Combine all ingredients in a pitcher, stir, pour.

  • 1 cup white sugar
  • 1 cup water
  • 5 cups, ice-cold water
  • 1 cup Tito’s Vodka
  • 1 1/4 cups freshly squeezed lemon juice
  • 6 dashes Angostura Bitters (optional)
  • 2 sprigs of thyme (optional)
  • Ice (as needed)
  • 1 lemon sliced for garnish

Directions

Step 1: Juice the lemons

Squeeze and squeeze and squeeze till you can’t squeeze no more. If you don’t like it, strain the pulp.

Step 2: Make simple syrup

In a small sauce pan, bring your sugar and water to a boil. Once the sugar has dissolved, turn off the heat and let it cool.

Step 3: Combine. Drink.

Combine fresh-squeezed lemon juice, water, vodka, simple syrup, and ice. (Optionally, add the bitters.) Stir to combine. Add more lemon juice to taste. Garnish with thyme and lemon.
